  1. Daun Pandan (Screwpine Leaves) are dark green in colour. They are used often in the preparation of sweets, cakes, kuih and some savouries. They are used for their special flavour and aroma. Good substitutes are stick cinnamon and rose or vanilla essence.
  2. Pandan juice is extracted by pounding the leaves, adding a little water, then squeezing the mixture. This should be strained. It is used to colour and flavour cakes and kuih.
